Cider Season 2013!

I called Szalays’ corn farm to get cider…they were closed for the season!  I was able to locate another farm – that focuses on apples and apple pressing!  I even got to see the cider press in action.  It’s an hour away but that is fine.  I talked to the owner when I picked up the cider and it sounds like I can have cider at the  brewery at least six months out of the year as he can still press it into February.   Now I  just have to see if I don’t have to age it one year like I have been doing.  I would like to knock it out in one month to save on storage space.  So I am going to test it on the two recipes: The regular cider and the ginger cider.

This cider is naturally about 1.042 - last year Szalay's was 1.050.  Not sure if the difference is the orchard or the season.
